Had to sub in 1.5 pounds of optic malt instead of maris otter. Other than that everything went to plan except gravity was a little low. Had more room in the kettle for the mash than I expected, possibly due to the slightly smaller grain to water ratio.
After 24 hours at 64 degrees it looks like a slow start to WLP007. I top cropped some Wyeast 1968 to try to help out.
After 9.5 days I checked gravity and tasted. Gravity is around 1.030 but hopefully can drop another 5-10 points. Taste was fantastic; Some plum raisin sweetness with coffee chocolate and a hint of burnt roastiness. Very drinkable for being so young!
