Adapted from Austin Home Brew Supply Sierra Nevada Ruthless Rye IPA clone recipe
Bring 2 gallons of water to 155 F and turn off heat. Soak grains in hot water for 25 minutes. Lift grain bag in and out of the water like a teabag After soaking the grains, lift the grain bag out of the water Once the bag has dripped almost all of the water out (without squeezing) discard the grains, add 1 gallon of water and return to heat until boiling. Turn of the heat and move stockpot to a cool burner. Add the dry and liquid malt extract. Stir constantly to dissolve the malt extract. Return heat to the mixture once dissolved, stirring occasionally. Heat mixture to boiling. Add a few drops of anti-foam. Add hops according to hop schedule. Add one fermtab tablet at 15 minutes before flameout. Once boil time has elapsed remove the wort from the heat and cool down quickly to 80 F. Pour wort into primary fermenter and add cool water to make 5.25 gallons. Stir wort to make sure sugars are well mixed. Check and record original gravity. Pitch room temperature yeast and aerate with mix stir well. Ferment at 68-73 degrees for 5-7 days or until activity decreases. Transfer to secondary or corny keg for dry hopping according to hop schedule.
