Mashed in at 9:45.
RO water donated by Varietal.
Worried about amylase activation due to RO. Mash pH ended up at 5.2 so no concerns there.
Lautered at 10:45 for 5 minutes. Final mash temp 150, pretty spot on. Likely lost temp due to a sluggish mash in.
Fly sparged with 7.4 gal RO. Half an hour give or take.
Boil began at 11:40
Dropped 1.25 oz Pekko at 12:10.
Started Budojovice starter a little late. Probably 1.
OG 1.052. Pretty efficient.
Pitched yeast 65.
The first fermenter had mad cold break precipitating out. I have never pitched so low, pretty interesting. It was the clear carboy. Began stratifying rapidly but it could still generate some wierdness in the final product.
Fermenting in the cellar at 62. Not as low as ideal but when life gives you lemons..
FG 1.013 - Spot on.
Crashed on 5/23, 23 days after brewing.
Planning on packaging 5/25 or 26. Keg hopping, will transfer to new keg if beer is getting vegetal.
