Strike w/ 3.75 gallons at 129F. Desired temperature = 122F. Measured temperature = 125F.
Rest 30 minutes.
Infuse 2.83 gallons at 212F. Desired and measured temperature = 150F.
Added ~8 cups water at 200F at about halfway mark to ensure 150F was maintained as minimum.
Rest 35 minutes.
Sparge with 2.37 gallons at 170F.
Boiled per recipe.
Approximate wort volume = 6 gallons.
Primary fermentation temperature ~75F.
2013.6.8 - Racked to Secondary. 6 pounds of frozen strawberries, tops removed, halved / quartered. Rinsed, only. Beer racked to secondary to clarify (with filtered funnel), then racked back into (cleaned) primary fermenter with strawberries. With strawberries, beer is pink / light red.
Approximate volume = 5.5 gallons.
2013.6.9 - Less pink - more blonde. Strawberries have already become pale in color.
2013.6.15 - Taste test. Smelled strongly of strawberries. Almost no fast of strawberries but had a tart aftertaste.
2013.6.23 - Racked into priming bucket over 0.75 cup sterilized corn sugar. Used filtered funnel to help remove any solids during siphoning.
Bottled 38 large bottles (about 20 oz each.)
Taste test: same as last week. Still a tart aftertaste and good strawberry aroma.
