Recipe conforms to the Specialty Beer style.
For a one gallon batch. Dissolve honey in some warm water in a 1 gallon jug. Wash orange and slice into eighths. Add the orange, rind included, into carboy. Add raisins, clove, cinnamon stick and nutmeg and fill the jug to 3" from the top. Cap the jug and shake to blend and aerate. When at room temp., add 1tsp bread yeast. Install blow-off tube and put in dark place. After major foaming had gone down, top off with a bit of water and airlock. Do not shake or anything else to the jug - no racking, yeast feeding or stirring. After two (2) months or so, it should be cleared and you can wait for oranges to fall. Rack to a secondary container, leaving behind all sludge and pieces. Age for 1 to 4 years before drinking.
