Due to an ordering mistake on my part I ended up with a couple pounds more grain that I was planning. Figured I would roll with it and make an "Imperial" pumpkin ale.
I also used 3 pounds of mashed pumpkin in the mash. I used two sugar pumpkins weighing 7 lbs, cooked at 375 for an hour, scooped out insides and mashed. Let cool to room temp over night before using. Was kind of surprised this only came out to 3 lbs. but I already had more grain than I planned for so that was fine.
In addition I added 1 t. of pumpkin pie spice at 1 min. I used 1/2 t. cinnamon, 1/4 t. ground ginger, 1/8 t. ground cloves, and 1/8 t. ground nutmeg to make the pumpkin pie spice.
Dumped wort onto Safale-05 yeast cake and fermenting at 68 degrees.
