Recipe does not conform to the American Pale Ale style.
Put the ginger in a food processor until it is chopped/mangled/minced/grated. If you don't have a food processor, chop it up or something. You can leave the peel on. Combine the ginger and honey in a pot (ours was about a gallon, enamel pot) and heat to 185F. Continue to steep this at 185F for 40 minutes. Meanwhile, in another pot (ours was 3 gallon stainless), heat up some water (as much as fits) and add the extract, and the 45-minute hops. Bring to a boil. After 15 minutes, add the 30 minute hops. After 45 minutes is up, remove from the heat, add the finishing hops and steep. Combine the two pots.
