Forgot to add Whifloc Tablet during the last 5mins of the boil. However, I let the trub settle nicely and got a fairly good clean transfer to fermenter. Let's hope it isn't too cloudy/hazed
I had the fermenter sitting in a dedicated fridge set to very low. However I switched if off a few times when I noticed the air temp in the fridge getting down to around 10ºc. I've now installed temp controller switch to keep it consistent for at least the last few days of fermentation.
After taking a gravity and temp reading today 17/01/15 I learnt that even with the fridge air temp reading about 10-12ºc and the temp probe reading 18.1ºc the sample I took was bang on 20ºc. I've dropped the target temp on the controller to 17ºc to compensate and try get it down to around 18.5-19ºc.
I think I'll install a bulkhead into the plastic fermenter so I can get a more accurate temp with the probe.
All in all looking like a half decent Belgian Wheat Ale
