Brewed Bubble Bine. Spontaneously decided to parti-gyle the mash in the interest of seeing how much remaining sugar we could extract.
1.024 to 1.026. Not great, but not bad for a free 6 gallons. Fortified with a simple syrup of 1 Lb brown sugar and 2 oz Milne peach pow. Oh, and an unknown quantity of citric, coz end of brew day decisions tend to become questionable.
Pitched US-05 a couple days later. Gurgling commenced some time thereafter.
Pulled a sample on 10/8. Tasted like yellow Gatorade. Go figure. Must have been a lot of citric.
Pondered. light bulb. Margaraita gose. 10/14 dropped in 12 limes/0.99 oz zest, 3 Motueka from fucking 2016, 2 oz Sauvin from '17. 30g sea salt courtesy of Scott Janish's recipe.
10/14 sample: Salty citric sensory overload. Obv no hop character yet, will check Wednesday or before if I get bored.
