Notes

Standard infusion mash (~1hr, ~150-160degF). Primarily tart cherries (freshly picked, machine pitted, frozen-then-thawed) to be added to secondary fermenter. Some sweet cherries (dark & queen anne, in my case) also to be added for some body, color, etc (these cherries are NOT pitted). Split 2 x 2.5gal after primary. To batch 1 add 4# (pitted) tart, 1# queen anne, 1# sweet black. To batch 2 add 8# (pitted) tart, 1# queen anne, 1# dark sweet.
