Added 3 Lbs per gallon of blueberries 7/21
Sampled a month later. Thin, not as acidic as intended. Deep winey purple color.
Sampled 9/13. Super tart, more complexity as fruit cells lysed. Much more optimistic at this point than the August sampling.
9/13: Added 1 oz/gal fresh picked Mosaic. Still extremely dark hue with high turbidity. Pectinase?
