4/18/21012 Mashed into 6 gallons of 160F water, temp drop was less than expected (higher volume of water), only dropped to 154F. Temp dropped eventually to 148F after 35 minutes or so. Reheated and overheated to 158F for last 15 minutes.

Dunked grain bag in 1 gallon of 165F water, and pressed on grains to get as much volume of wort out. Next time use a bigger pot for the 1 gallon of water.

Ended up with a total of 6 gallons of wort pre-boil at 11Brix. Lost 1 gallon of water to the grains while mashing.

Boiled 60 minutes and final volume is 4.5 gallons, boiled off 1.5 gallons in the one hour.

Cooled to 70F in 16 minutes and whirlpooled. Let sit for 1 hour and racked to primary.

Final at pitching was 13 Brix, so about 60% efficiency. Could get higher if I had soaked with more than 1 gallong of water (maybe 2 gallons) and had mashed with one gallon less. So ideally:

Mashed into 5 gallons of water at 152F for one hour. Dunked the grains into 2 gallons of 170F water after the mash.
