Was wholly unimpressed with the combination of the Challenger and Cluster hops in the bag, but the wort smells WONDERFUL: slightly candy-like, slightly herbal, slightly sweet myrcene, and some intriguing foxiness.

I'd heard stories about the vigorous fermentation and wild blowoff from Safale S-04...and it is all true. This wort/beer is swirling like a tempest, filled the headspace with krausen and has maxxed out the capacity of a 1" blowoff hose. Still fermenting very energetically at 65F ambient. 1.010! and it's nearly totally dropped out. Racked into secondary.

Totally still and dropped out. Added 4 oz Dark Brown sugar in 4 oz boiling water, and bottled.

Had a few over the weekend. Delicious, bitter, malty, little hop aroma, slightly dry finish, low carbonation. Another fantastic brew.
