Heated 6 gallons of water to 110 F (50% tap/50% cheap spring water) , started 30m steep with burner on high (turning off when wort temp is at ~160). Removed grain bag after 30m. Added 7 lbs LME. Added FWH (1.25 oz). Turned burner back on. Heated to boil. FWH probably lasted 30-45 minutes since it took so long to reach a rolling boil. Had lid 2/3 way on in order to keep a boil going...weak stove, but still wanted to allow volatiles to vent. Added 1.25 oz hops at 30m from FO. Added 1.5 lb dextrose, 3 lbs LME, 1 tsp Fermax at 10 minutes remaining. Waited for wort to return to boiling, then started timer again (10min remaining). Added 2.6 oz hops at flameout, sit 10 minutes with lid off, stirred with sanitized stirrer. Moved to ice bath. Let cool for forever, transferred to fermenter at 85, let cool for forever again, shaked a lot, let cool for forever, pitched at 70-71. Moved to basement which is around 64 right now. Propped the window open a bit to get the ambient air temp down just a touch. Didn't boil off as much water as expected and had a batch size of around 6 gallons after pitching (2L starter). Mistake: adding water to get to 5.5 gallon before pitching starter. Will let rest till the new year and then dry hop with 5oz for 1 week prior to bottling. If I hit 1.013 with SDSY I will be happy. OG 1.073.
