I cold steeped the midnight wheat for about 36 hours and added it during mash out.

Subtle German wheat aromas from the Wyeast 3056, but no strong clove or banana.
The midnight wheat gives it light roasty flavor with no astringency. I'll use this malt again in a dark lager or BIPA.
I can best describe this beer as a cross between a wheat ale and a porter.
